You might be wondering, “what is fattoush salad?” An authentic Lebanese fattoush salad recipe is a combo of fresh chopped veggies, lots of herbs and fried pita bread tossed in a citrus dressing.

So yum, right?

Yep, so much yum we gave this traditional salad a tex mex flair thanks to BUSH’S Black Bean Fiesta™.

How to Make Fiesta Fattoush Salad?

Fried Flour Tortillas

Chopped Veggies (tomato, bell pepper, onion, romaine, avocado)

Lots of Cilantro

How to make Fiesta Fattoush Salad with fried flour tortillas, black beans, and homemade cilantro lime dressing. Easy weeknight dinner packed with veggies.

We recommend flour tortillas because they provide a texture similar to pita – exciting and crispy!

You can also use corn tortillas here too. Crisp up flour tortillas in a heavy skillet, like a cast iron, for a perfect golden color and flavor.

Ingredients for Cilantro Lime Dressing

Olive oil

Lime juice

Garlic

Jalapeno

Cilantro

Salt and pepper

This really is an easy salad dressing to toss together. We keep this dressing thick and chunky. BUSH’S Black Bean Fiesta™ also provides part of the dressing for this salad so don’t drain the can!

Ingredients

Fattoush Salad

  • 2 tablespoons olive oil
  • 6 small flour tortillas, sliced into triangles
  • Salt and freshly ground pepper, to taste
  • 1 large head romaine lettuce, chopped
  • 1 large tomato, diced
  • 2 green onions, sliced
  • 1 green bell pepper, chopped
  • 1/4 cup chopped cilantro
  • 1 can BUSH’S Black Bean Fiesta™
  • 1 avocado, diced

Cilantro Lime Dressing

  • 2 tablespoons olive oil 
  • 2 tablespoons lime juice (about 1 large lime)
  • 2 cloves garlic, minced 
  • 1 jalapeño, seeds removed and minced
  • 2 tablespoons chopped cilantro
  • 1/8 teaspoon salt
  • Freshly ground pepper, to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. When oil is hot, add tortillas and fry for 3-4 minutes, season with salt and pepper and continue to cook until tortillas are crispy and golden in color.
  2. In a small bowl, whisk together dressing– olive oil, lime juice, garlic, jalapeño, cilantro, salt and pepper.
  3. Just before serving, in a large bowl, toss together lettuce, tomato, onions, bell pepper, cilantro, Black Bean Fiesta black beans and avocado.
  4. Gently toss in dressing and top with fried tortillas; give salad another toss and enjoy.

    Omg, I’m definitely saving this for later! The recipe seems to be really filling and affordable. It looks so inviting. All the ingredients go so good together. It’s perfect for both lunch and dinner. Plus, the salad couldn’t be any easier to make.
