My 10 Grocery Must Haves
Yesterday I was building a list with my intern Lindsay of the most important foods for a college athlete to buy at the grocery store, and I got to thinking this might be fun to do on the blog. A list of the top 10 foods that always land in my grocery cart each week, and show you how I use them. Eggs. I'm obsessed. Eggs in the morning, for sure almost. every. day. You can count on that. I like the way that scrambled eggs make me feel first thing in the morning. My favorite way to eat eggs is with a big bowl of roasted veggies on top of either roasted potatoes or grits. Get one of my Veggie Breakfast Bowl recipes here. Greens. I like having a big salad for lunch so I always stock up on greens that are in the containers not bags. How to Roast Veggies 101
How to Guide for Roasting Vegetables. Roasting brings out the sweetness of a vegetable when it caramelizes in the oven. This Roasted Butternut Squash makes the perfect side dish or can be used in another recipe that calls for roasted butternut squash. YUMMMMM! This one is for you. You know who you are. When I hear the dreadful phrase, "I don't like vegetables", or "I'm a picky eater... I'll only eat corn and peas". My head starts to spin, and it makes me want to just run straight to the kitchen to whip up some absolutely scrumptious roasted veg, and bring that picky eater a plate. Roasted veggies are like candy I tell 'ya. Munching on broccoli hot off the pan, ooooo man. Roasting a pile of vegetables is a staple in our house, if you can't tell from the recipes on this blog. Now for ... View Post
Christmas Traditions 2014
For those that celebrate I hope you had a wonderful Christmas!! It was extra joyful for Eric and me this year. Lots of family time and time off work for both of us, which is a rare occurrence but it was really needed and restful. Which is why I've been quiet on the blog as well. I hope you all had some good space from the usual routine to rest and relax and enjoy the people that mean the most to you. Eric and I kicked off the week with a little family get together at our house filled with warm bowls of chili and s'mores over the came fire. I always love entertaining especially this time of year. We went home to our parents houses (who live 10 minutes from each other), and stopped at Eric's parents house first for a new tradition, Christmas Eve Brunch. I made a Sausage ... View Post

Fall Race Schedule + #TrainingBites {Almond Butter Cream}
Since the marathon in Vermont this spring, my ankle has been giving me fits. I honestly didn't know if I was going to make it 26.2 miles with the pain I was experiencing leading up to the race. I took a full month off of running (June) and the past two months, I've been getting back into it... well trying. The thing is, my ankle hasn't really healed. I found out it's tendonitis, and aside from massages twice a month, I haven't done my own work. So I joined a yoga studio last week. I woke up on Sunday morning, hardly movable with my back in knots. The left side of my body is revolting. I had a quick release massage to treat my back, and found that my tight hip flexers are referring pain to my back... ugh! Then I got this cool light treatment on my ankle that identified inflammation. The ... View Post
