Easy Baked Salmon with Spicy Peanut Butter Glaze

And bonus, it's easy to prepare and cook on a weeknight! Salmon is brain food, the essential fatty acids in the fish like omega 3 fat (DHA) and fat soluble vitamin vitamin D3 are nutrients found in the brain, eyes, and are so important for preventing disease... specifically cancer and Alzheimer's! It may not be a surprise but these two nutrients are under consumed in the diet, mostly because we don't eat enough fish. A 3 ounce serving of wild sockeye salmon has about 2000mg omega 3s and 450 IU vitamin D. ... View Post

FNCE 2016 in Review
Heyyyy! So it's Thursday already and how is Thanksgiving next week? This year has flown by. I'm telling you the last few months have been packed for me, it's just the nature of this time of year, right? But the good thing about that is it makes us really ready to enjoy the holidays! I told you this week was recap week on the blog where I share what all I've been up. So this time last year we had a newborn so I wasn't able to attend FNCE 2015 (the Food and Nutrition Conference and Expo) in Nashville, so this year I was NOT GOING TO MISS IT. It's that must attend conference for RDs. And when I learned the it fell on my son's 1st birthday, I begged Eric to take a little vacation to Boston so we could all be together on P's birthday. Because missing FNCE just isn't in my ... View Post

I'll be the first to admit, I'm not that talented when it comes to cooking fish...but this recipe quickly climed to the top of the ranks. I did a pretty good job on this one if I say so myself, and it's truly a sinch to make. If it's not easy, it's not happening in my crazy life. I need quick, afforable and tasty eats on the regular. Health is important to me, but honestly it's sometimes secondary to quick, affordable, and tasty... because all of those are number one and fundamental. Almond Butter Acai Bowl
This Almond Butter Acai Bowl tho. The taste of almond butter with acai and banana in a bowl topped with all the toppings. Plus who can resist extra almond butter drizzled on top?! Almond butter in every bite! Have you tried acai? I made an acai bowl for the blog last year and then worked on a photography project with a local start up Create Your Nature, and made and photographed and ate bowl after bowl of acai. And am quite into acai... especially with al la almond butter. Or AB as I like to call it for short. Because it's just more mildly creamy than peanut butter. I like to get the all natural almond butter from trader joe's because it's pourable since the only ingredients are almonds (and salt if you get the salted version). No added oils or sugars or stabilizers or flavorings like ... View Post
