Abundance Bowls with Almond Butter-Lemon Dressing. Roasted veggies topped with the creamiest lemony almond butter dressing! This vegan abundance bowl will make you feel ahhhhhmazing from the inside out! There's nothing like starting off the week with meals prepped and ready to go in the fridge. One of my main goals for this year is to be fiscally fit. Eric and I have kept a budget since we got married (wow, it's been almost 5 years!), and we know our weaknesses. The area that we consistently overspend is food. I dislike that fact. And when it comes down to it.... why yes I do like to by fancy products at the grocery store like gluten free bread and almond butter, but come on I'm not shopping at Whole Foods.. so honestly when you boil it down, one of the main reasons we are ... Vegetarian Spaghetti Squash Boats
This post is sponsored by the Canned Food Alliance. Vegetarian Spaghetti Squash Boats are the ultimate healthy comfort food made whole simple ingredients just right for a weeknight. Who's set New Year's resolutions already? I can tell you this much, it's on my to-do list. My goal is to sit down long enough to evaluate last year and put together a list of goals for 2015. Maybe I will need to resolve to clear my schedule and prioritize my goals before I can set new goals. Any who, I'm a list maker and thrive when I have a schedule with things to cross off. Even simple stuff like "give Pearl a bath" or "send so and so an email". Maybe this is extreme, but I can easily forget things if I don't write it down. I love how the New Year gives a fresh perspective and a time to look back at how ... View Post
Thanksgiving Weekend Festivities 2014
Was anyone protesting this week? The long holiday weekend was amazing, I don't know about you but it was tough to get back into the swing of things after Thanksgiving. Eric and I did a Turkey Trot at Lake Eola on Thanksgiving day. It was a pretty chilly start and warmed up rather quickly. I didn't have that great of a run, but I did run!! With all the walk/running I've been doing it was a stretch for me to run consistently for 3 miles! After the fun run we drove to my parents for lunch and to Eric's grandma's for dinner. Our families are about 15 minutes from each other so it makes it easy, or rather a really long day :) But it's worth it because at least we don't have to choose who we will see on the holidays. I contributed my Apple & ... View Post
When did Thanksgiving turn into an all you can eat buffet?
Hey guys, with Turkey Day tomorrow I got to thinking, soooo when did Thanksgiving day turn into an all you can eat buffet? While good food should be enjoyed, the turkey or pumpkin pie does not deserve center stage! To me we should put more emphasis on enjoying each other's company vs falling into food coma. After all, it’s about giving thanks and cherishing family, friendships, and life. FYI-- the hubby decided to take over the blog today, just be fair warned. The idea that the cultural norm is to stuff yourself like a turkey, and fall asleep after a big ‘ole feast, has never sat well with me. This isn’t the last time that you’ll get turkey, and dressing, and cheesecake! It truly is okay to give yourself permission to eat until your satisfied and leave the rest for later. I know, ... Blog Brûlée + Weekly Eats
I made back to Orlando late last night from Blog Brûlée, an RD food blogger retreat in Vermont. Connecting with old friends and meeting new ones that inspire me really builds me up. Lovely ladies right to left: Kara Lydon, McKenzie Hall, Danielle Omar, Min Kwon, Me While we did a great deal of learning from each other it was more like a “party” where we just spent time together, talking about food blogging from SEO and building a brand, to food photography, styling, and photo editing. I’ll be sure to share more about my major takeaways in upcoming blog posts. Ann and I got out in the chilly weather yesterday morning for a hike to get our blood flowing before a day of travel. Vermont is so beautiful with the scenic views and lots of rolling hills… took me back to the ... View Post
10 Tips for a Healthy Tailgate + RECIPES
Who's ready for some football?? I know someone in our house is beyond pumped for the first college football game of the year, and it's not the cat. My husband has been looking forward to the start of football season all year long. Can you relate? I love Auburn football, and I support my UCF team and after that, I'm done. He's picking me up from the airport tonight so he will be missing the first part of the game #truelove. I have ulterior motives for loving the start of football season--> FALL! When it's a game weekend aka every weekend from here on out, we make a festive dish and I go out and do my thing such as shopping, decorating our house, or gardening. I can hardly wait for Labor Day weekend to begin because I plan to do just that! For those of you that will be going to a ... View Post
Flying to Cali + Bacon Quinoa Chili
I’m jet setting to California today, and writing from 10,000+ miles in the sky! I’m heading to an “Almond Orchard Experience” with California Almonds. Can I just say I’m beyond excited about the trip and I’m pretty sure they are totally pampering us while we are there. YAHOO!! Follow my IG feed for picture updates. Eric is a single parent this week. I’ll be gone for 4 days, and it will be one of the longest times I’ve been away from Pearl since we adopted her, so sad. Yesterday, I spent the day meal prepping and packing. We went out for a nice run in the morning and met up with our CFO friends to do a quick track workout. Eric has a big trial coming up and I know he’ll be busy, so I didn’t want him to be completely fending for himself since he’s use to home cooked meals. Here’s what I ... View Post
Keybank Vermont City Marathon {Cabot Fit Team}
First off, I’ll be the first to admit I’m not very good at training for a marathon. The marathon requires some serious dedication. By nature, I’m a weekender. There is nothing more that I’d rather do on a Saturday morning than to wake up causally and pop over to the Farmer’s market with Eric and enjoy a cup of coffee. So when I was invited to be a part of the CabotFit team this year to run the Keybank Vermont City marathon (my 3rd and his 2nd) we decided to do our long runs on Sunday. Well, that worked for the first few weeks until we went out of town for the weekend or something came up to where we couldn’t do a long run in the morning so we’d have to go out in the afternoon, and it’s downright near impossible for me to crank out 15+ miles in the Florida heat and ... How to write a food blog with a full-time job?
I'm all about a game plan. Eric is likely rolling his eyes right now if he's reading this blog because this often annoys him. Everything must have a plan... from the weekly menus, monthly budget, workout schedules, to how we'll spend our weekend. I'm not saying I don't like to be spontaneous, I just know that plans are the way I function to get stuff done. Since we've been married, he has sure taught me how to be calm and relax. I'm a work in progress, but at least there is progress. If you have followed this blog for a while you might have noticed that things have recently changed around here. Yes, there is a new look but I'm also trying to get more on a schedule with posting recipes. All 3 years that I have been blogging, I've worked full time so the blog hasn't been my BIGGEST ... Almond Joy Cookies
Almond Joy Cookies that taste just like the candy bar! Chewy, sweet and almondy - YUM! Eric and I spent a lovely weekend with friends in Dothan, Alabama. We grew up with Brian and Rachel and it was really neat to visit them in their new city and get some good quality time with them. It was a really active and relaxing weekend that was low key and just how we like it. On Saturday morning we went to a HIIT workout class followed up by a chilly walk on a nature trail. The scenery was beautiful, and so different from what we are familiar with in Orlando. That night afternoon Rachel and I used my basic chocolate chip cookie recipe and made Almond Joy Cookies! I have to share that we prepared these the old fashioned way, creaming the butter and sugar by hand. Yep, great ... View Post
