Remember last week when I was complaining about my steps and being office bound and sedentary? Sitting sucks. Well this weekend we blew that out of the water (27,000 steps), and it’s getting me excited about the week ahead! On Saturday, I went into work with the Magic because they had practice. And when I got home my hubby was deep cleaning our house. He’s such a sweetie and ever since my cat allergies have been really great too! Thanks honey! That afternoon we did a little budgeting, meal planning, and grocery shopping.Sunday we got up I did some photography and took a long walk around the neighborhood, coffee in hand. It was a foggy morning and 70 degrees. I loved running into Victoria, RunningPeanut.com, who was out on her morning long run. After church, Eric and I set out for ... View Post

Mocha Quinoa Crunch Bar
My brother gave me Jawbone Up for Christmas this year. I'm all about these little pedometer/sleep watches and promote them to many of my clients. It has totally made me more cognizant how little I move when I have "office days" where I'm doing back to back counseling sessions. It's pretty sad, and this is even if I workout... we're talking 6000-7000 steps guys! Not good when the "average person" should be taking 10,000 steps per day. This is definitely something that I'm working on, and it has reshaped the way I think about house chores. Those little steps I take around the house add up for real. Eric and I did pretty well this week with morning workouts that we planned. I think one big motivator is that we've teamed up with my brother to do track workouts. He's running the Corproate 5K ... Lasagna Pie
Eric has been getting off later in the evening and by the time he is home we are both pretty hungry which has been interfering with our workouts. Who wants to run when they are ready for dinner? So we both snacked before, and laced up our shoes.I went ahead and prepared dinner for tonight before he got home from work, so there wouldn't be any excused to skip our workout. It's been storming and lightening almost daily; we'll have blue skies at the start of the run and lightening at the end which scares the beejeebees out of me... so needless to say I picked up the pace on the way home.During our cool down, dinner baked in the oven! No work required. I needed a night off.Now for some relaxing, listening to the storm, and reading my book before I fall asleep. Night.Lasagna PieServes 41 medium ... View Post
Fig Power Balls
Fig balls or bars. Easy vegan dried fig recipe great for pre or post workout! Fig Balls - a vegan power ball recipe. I was bit by the bug, again.Six weeks ago I began triathlon training. It's been two years since my last race (April 2010). I took a little hiatus after I got married, not because I didn't enjoy triathlon, but simply out of convenience. I didn't have easy access to a pool. Went on a few group rides, but never really started exploring the roads in Orlando. Shortly after we got married, we joined a running group and began training for our first marathon, and continued with marathoning and did another this past year. Then I got bit. I was down at the Y clocking in for a consult and ran into the coach of the tri-club. As we got to talking he asked... ... View Post
Eggplant Spelt Ravioli
Spelt, have you heard of it? It's a whole grain that's pretty ancient dating back to more than 8,000 years ago. The rich history of spelt attracted me... it's even talked about in the bible. Since I've been dying to make homemade pasta using this pretty little ravioli stamp, I decided to give spelt a rendezvous in ravioli. Cabot's 75% reduced-fat cheddar made this new-to-me whole grain even tastier. I'm pretty skeptical of reduced-fat cheeses because they usually make a rubbery and flavorless mess. To be honest, I was surprised that even though Cabot's cheese is 3/4 the fat of regular cheddar, it still melts into gooey-oooey-goodness. It's almost like magic in your mouth. To top it off, it doesn't leave my stomach in knots cause it's lactose-free, yo. Gotta say, my husband's ... View Post
Why I run…
There are many reasons why I run, and I thought I’d share them with you.Space. Running gives me space to think. When I started running, I used an ipod to listen to music. I think it began as a distraction technique so I wouldn’t feel the “pain” as much. I then got into training for triathlons, and realized that an ipod would not work during a race so I started flying solo, and haven’t looked back. Now I listen to the birds, connect with the space around me, and think about things... sometimes I find myself blogging while jogging ;)The High. Okay, I don’t like to admit it...but as I’ve started working and beginning “life” after college, I’ve noticed my schedule filling up creating less me time. WHOAH, never thought I’d find myself saying that so soon. As the pressures and demands build up, ... View Post
Happy Anniversary, Love.
Husband, I love you. Thank you for this exciting and wonderful year we have shared. Our God truly has the best plans, far more than our hearts could have ever imagined. This year has been a blessing! We got married, honeymooned in Naples, cooked together, danced a lot, enjoyed walks, fed the birdies down by the lake. We have made this new place in Orlando our home. You have let me redecorate our little bungalow, turning your bachelor pad into a cozy place for two. You even looked the other way when I took down the football pictures that you had up on all of the walls. We have explored this our community by foot, you even woke up at 4:30 am to do long runs and track workouts as we trained for our first marathon. Even though you became injured last year, you were there for me. You ... View Post
