Superfood Turkey Tacos a family favorite with an extra dose of veggies that you can’t see. 🙂 Ground turkey tacos sautéed with super tiny mushrooms, walnuts, and cauliflower rice to make a mostly plant based meaty meal.
If you want to go completely veggie, I’ve even made these superfood turkey tacos with lentils instead of meat. Add fully cooked (yet slightly firm) lentils into the recipe instead of turkey at the turkey step in the directions.
You will be so surprised at how your meat eaters will love this meal and your kiddos won’t even taste the nutrition disguised into the taco meat.
This recipe meal preps and freezes well too. Make up a batch at the beginning of the week and store in airtight container for when you’re ready to dig in.
You know I’m all about that freezer stock– because real life calls for a fully stocked freezer with pre cooked meals at the ready, and major props when it’s homemade like these superfood turkey tacos or mama’s cheesy meatloaf minis.
Top this superfood turkey tacos mixture on a burrito bowl or enjoy stuffed into a soft flour or corn tortilla. You can even serve it up like nachos or enchiladas… ya’ll my brain is always thinking and craving Mexican food. Oh you too? So glad to be in good company.
I’m curious– how do you typically do taco night? Salad, chips, or soft or crispy tacos? For me, it usually looks like a BOWL because ya’ll I’m bowl obsessed and have my bowl I like to eat out of. Ask the hubs… if it’s in the dishwasher I’ll dig it out to give it a scrub just to use that bowl for my bowl meal.
If it’s taco night at our house my bowl will be a pile of greens + a little rice + superfood turkey tacos mixture + 1/2 an avocado diced + tortilla chips + sour cream + tomatoes… sometimes I’ll throw on corn, cheese, salsa, beans, and limes… just depends on the mood and what we have on hand.

Description
Superfood Turkey Tacos a family favorite with an extra dose of veggies that you can’t see. 🙂 Ground turkey tacos sautéed with super tiny mushrooms, walnuts, and cauliflower rice to make a mostly plant based meaty meal.
Ingredients
- 8 ounces mushrooms
- 1/2 cup raw walnuts
- 1/2 cup cauliflower rice
- 1 teaspoon minced garlic
- 1 pound ground turkey
- 1 packet taco seasoning
Instructions
- Place mushrooms and walnuts in a food processor and pulse until very small chop.
- In a large non stick skillet, sauté mushrooms, walnuts, cauliflower rice and garlic until soft. Remove from pan; set aside.
- In same pan, add turkey and cook until browned. Add veggies back to pan and mix into turkey.
- Stir in taco seasoning; add 1/4 cup water or broth to mixture, cook an additional 2-5 minutes. Serve in taco shells or on burrito bowls with rice, lettuce, avocado, cilantro, tomatoes, cheese, and salsa.
