Healthy Banana Chocolate Chip Muffins

These gluten free coconut flour muffins are a dream come true, friends. The flavor combo of chocolate, banana and peanut butter are out of this world!

Ever wake up wanting something chocolaty for breakfast? Happened to me this morning, so I decided I would satisfy the desire with some of these Healthy Banana Chocolate Chip Muffins!

The perfect combo of peanut butter and chocolate has these Healthy Banana Chocolate Chip Muffins tasting like a Reese’s peanut butter cup – with a hint of banana.

I personally love the banana flavor and the natural sweetness it adds to this coconut flour recipe, but you can totally use maple syrup if you don’t have a ripe banana on hand or you prefer non banana muffins.

How to make Banana Chocolate Chip Muffins?

These flavorful babies are made with wholesome ingredients including coconut flour, one of my personal baking faves. This recipe only calls for 1/4 cup– a little goes a long way!

These muffins are also lower in sugar since the banana is the main source of sweetness – plus the chocolate chips 🙂

Wanting a sweeter muffins without adding lots of sugar? Make sure your banana is SUPER ripe – I’m talking almost black. Those are the very best bananas to bake with! Another option for no added sugar is stevia chocolate chips or cacao nibs.

Coconut Flour Substitute?

Keep in mind that coconut flour is NOT a 1:1 ratio if you’re subbing another flour. Because coconut flour is incredibly dense, it requires much less when using it to bake. If you choose to bake with a different type of flour, change flour measurement to 1 cup for this recipe!! 

If you need a coconut flour substitute, you have options if you don’t have any on hand. These are some other flours I love to bake with…

  • King Arthur Gluten-Free Measure for Measure Flour

  • King Arthur’s All Purpose Flour

  • Bob’s Red Mill Finely Ground Almond Flour

  • Bob’s Red Mill Gluten-Free Flour

For every cup of regular flour, I usually start with 1/4 cup coconut flour and then go from there until I achieve the right consistency in the batter.

Coconut Flour Nutrition

High in dietary fiber, healthy fats and protein, coconut flour is pretty dang nutritious. A good bit more nutritious than most baking flours in fact. And what I love about coconut flour is it’s just that: coconut. We love coconut flour recipes for this reason!

A 1/4 cup serving of coconut flour yields…

  • 12o calories

  • 16 grams carbohydrates

  • 6 grams protein

  • 4 grams fat

  • 1o grams fiber

  • 3.6 milligrams iron – 20% DV

Healthy Chocolate Chip Muffins for Toddlers?

Make these tasty muffins for your littles by using a mini muffin pan! Makes the perfect size muffin for their little hands and tummies.

Not to mention the wholesome ingredients in these muffins that are delicious and nutritious! Coconut and peanut butter are two wholesome sources of healthy fat that is essential for growth and development.

How to make coconut flour banana muffins keto, vegan or paleo?

These muffins can be made vegan using a flax eggs and dairy free chocolate chips. Flax eggs are made with flaxseed meal and water – for this recipe, combine 2 Tbsp flaxseed meal with 5 Tbsp water.  You can also use a powdered egg substitute.

Enjoy Life is a great dairy-free chocolate chip brand for this recipe – don’t want you to miss out on the chocolaty goodness 🙂

Do I have to use peanut powder?

Nope! Feel free to use almond butter powder or natural peanut butter. If you’re using peanut butter or another nut/seed butter, be sure to reduce measurement to 1/4 cup instead of 1/2 cup.

Description

Chocolate chip muffins to the rescue— you’ve gotta try these no added sugar Healthy Chocolate Chip Banana Muffins. These easy Coconut Flour Banana Muffins are gluten free! Plus coconut flour recipes for keto, vegan, paleo, and mini muffins too!

Ingredients

  • 2 eggs
  • 1 ripe banana mashed (or 1/4 cup maple syrup) 
  • 1/4 cup avocado oil or melted coconut oil
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup cocoa powder
  • 1/2 cup peanut powder 
  • 1/4 cup coconut flour
  • 1/2 cup chocolate chips (vegan, no added sugar if needed)

Instructions

  1. Preheat oven to 400 degree; coat muffin tin liberally with cooking spray. 
  2. In large bowl, whisk together eggs, banana, avocado oil, and vanilla extract. Stir  in cocoa powder until fully incorporated. 
  3. Whisk in baking soda, salt, and almond milk and stir until fully combined.
  4. Stir in peanut powder and coconut flour. Fold in chocolate chips.
  5. Spoon batter into muffin cups; stir in a tiny dollop of peanut butter and sprinkle additional chocolate chips on top if desired 🙂 
  6. Bake muffins for 15+ minutes until tops are set and toothpick inserted is crumbly not wet.
